AI for distilleries — where it really saves time

You mash, distill, let it age and bottle it. The sales and office work gets done in the evening after the still is cleaned. That is exactly where AI helps — not at the still, but with the writing around it. Here is what actually works and what does not.

What this is not about

AI does not mash, does not distill, does not make the cut and does not taste a spirit. If someone tells you AI makes your spirit better or doubles your turnover, walk away. What AI can do: take the office and sales work off your hands that steals your evenings. For a farm or small distillery that is often worth more than any big promise.

1. Write product and brand texts faster

You know your spirits, the ingredients and the story of your place. What eats time is putting it into clean wording for the shop and label insert. Give an AI chatbot the keywords for what it is about — "Williams pear brandy, pears from our own farm, aged in oak, mild" — and have it build a clear product text and a piece of storytelling from that. You supply the aroma and tasting notes yourself. The tool delivers the form, you deliver the substance.

2. Organise tasting and tour bookings

Distillery tours and tastings bring walk-in customers to the counter — but the back-and-forth by email eats time. AI helps to pre-draft confirmation emails, directions and notice texts, to put an overview of dates into plain language or to draft a friendly standard reply for group enquiries. You keep the calendar and the yes-or-no decisions yourself — AI only takes the typing off your hands.

3. Social media and newsletter

A post about the new gin edition, a seasonal newsletter, a short text about the open day at the distillery. All texts you rarely write and that therefore take ages. AI gets you to a usable draft in five minutes that you only need to adjust. Important: no health-related claims about spirits and no advertising aimed at minors — you check that in every text yourself.

4. Answer enquiry and customer emails

Order enquiries, shipping questions, queries from resellers and the hospitality trade — all polite, clear and without long pondering. You enter the key points, AI drafts a friendly reply in your tone. Especially with difficult emails (a complaint, a delayed delivery) it helps to have a draft made first and then smooth the tone, instead of typing in anger.

5. Reply to online reviews

Replying to Google or shop reviews brings in new customers — but who feels like coming up with replies in the evening? Enter the review and have a suitable response suggested. With criticism the rule is: stay factual, keep it short, no justifications. AI helps you hit exactly that tone instead of sounding snippy.

Honest limits:
  • AI does not replace the skilled work of distilling or a sensory tasting. You assess the quality at the glass.
  • It gives no binding information on alcohol law, allergens, labelling, spirits duty or monopoly questions. That is for customs, the authorities or specialist advice.
  • Mind youth protection and alcohol advertising rules: no advertising aimed at minors, no health-related claims about spirits.
  • It sometimes invents details. Read every text against the facts before it goes out.
  • Do not type sensitive customer data into AI tools — the GDPR applies to you too, and when in doubt check first.

Is AI worth it for a small distillery?
Yes, if you have a lot of office and sales work: product texts, booking emails, newsletters, review replies. That is exactly where AI saves time. For distilling, ageing and tasting it changes nothing.
May AI assess the quality or aroma of my spirit?
No. The sensory check and quality assessment you do yourself, that is skilled work at the glass. AI only helps put your own tasting notes into readable sentences for the product page.
Can AI tell me with certainty how to label alcohol or calculate spirits duty?
No. On labelling, allergens, alcohol law and spirits duty AI gives no answer you can rely on. Ask the customs office, a tax adviser or the responsible authority. AI can only help you prepare your questions.
Is my customer data safe with AI tools?
Use tools with EU hosting or business plans with a data agreement. Do not enter full address or personal data into free consumer versions.
